I live thousands of miles away from my family and most of my friends. Whenever I am homesick, I try to cook one of my mother's recipes to make me feel closer to them. That is why this week I decided to bake cookies, just like my mom used to make for us.In fact, my mother claims that this is the best organic almond cookie recipe I can ever find, and after baking these delicious cookies I am sure you'll all agree. It's a really simple and fun cookie recipe to bake with your kids :)
First I should start by listing the ingredients you need:
- 2 cups of organic unbleached flour
- 2 teaspoons of aluminum-free baking powder
- 1/2 teaspoon of salt
- 1 stick of unsalted organic butter
- 1 cup of organic sugar
- 1 organic egg (at room temperature)
- 1 organic lemon zest
- 1 teaspoon of vanilla extract
- 1/3 cup of organic milk
- 1/2 cup of crushed organic almonds
You can start by adding the dry ingredients together. If anyone is wondering, the dry ingredients are 2 cups of flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Mix these in a large bowl with a spatula.
Add 1 stick of butter, 1 cup of sugar, 1 lemon zest, and the egg into the food processor, and mix them up for 2 minutes. Then add 1/2 cup of almonds and 1 teaspoon of vanilla extract to the batter.
Your next step is to add the mix of dry ingredients to the batter in 3 steps. You just add 1/3 of the dry ingredients to the batter each time, and just turn on the food processor for 1 minute. When the dry ingredients are mixed with the batter completely, it is time to put the cookie dough to rest in the fridge for 30 minutes.
Take a large tray and line it with some parchment paper. Preheat the oven to 375 degrees. Then take the cookie dough out of the fridge; using an ice cream scooper place approximately 12 to 14 cookies on the tray.
Bake for 23 to 25 minutes until the cookies are golden brown. Cool the cookies for a few minutes, and then transfer them to a large plate or your favorite cookie jar.
Finally, we can enjoy my mother's home-made organic almond cookies with a glass of cold organic milk :)
